I wanted make some cookies for the kids teachers this year, but did not have a lot of time. I decided to make star cookies and ice in red, green, and white. I put them in clear take-out boxes and tied some Grinch ribbon to them. The kids wrote out the tags.
Sugar Cookie Recipe:
- 1 C. (2 sticks) Unsalted BUTTER, softened
- 1 1/2 C. Confectioner’s Sugar
- 1 Egg
- 3 tsp Lemon Extract (Any Flavor)
- 2 3/4 C. all-purpose flour
- 2 tsp. baking powder
- 1 tsp. salt
Preheat oven to 400 degrees. Cream together softened butter and confectioner’s sugar. Crack the egg into a separate bowl, and add the extract. Add to the butter sugar mixture and mix until the egg is thoroughly incorporated. In a separate bowl, sift together the flour, baking powder, and salt, then add little by little to the mixture. Dough is ready when most of it sticks to the paddle. To the touch, it has a little give, but does not stick to my fingers. This makes about 2.5 dozen cookies. I split the dough in half and put in the fridge for about 10 minutes. The original recipe does not call for it, but when I tried the dough that had been in the fridge a little it was easier to use with the cookie cutter. Cook for about 6-7 minutes depending on your oven.
I cooked these in the evening. The next morning I iced with a first coat, then that same night I added the zig zag lines. I packaged up the next morning before school.
I used a 2.5" Wilton star metal cookie cutter and the clear boxes I purchased from PaperMart.com.
